Crock-Pot Chuck Roast Tacos
These Crock-Pot chuck roast tacos are one of my absolute favorite easy dinners. They’re juicy, flavorful, and topped with the creamiest corn salsa that takes them over the top, perfect for busy weeknights.

Instructions
Add garlic to the bottom of your crockpot. Place chuck roast on top, then add onions, taco seasoning, broth, Rotel, and lime juice. If using, add chipotle pepper, cumin, and bay leaf.
Cook on LOW for 8 hours or HIGH for 4-5 hours until the meat is tender.
Once cooked, shred the meat and mix it into the flavorful juices in the crockpot.
While the roast cooks, prepare your creamy corn salsa ingredients in a bowl and chill until ready to serve.
Serve the shredded beef in warm tortillas, topped with the corn salsa.
