Easy 8-Hour Slow Cooker Dinners for Busy Weeknights
When weeknights get crazy, figuring out dinner is often the last thing on my mind. That's why I lean on these slow cooker dinners that literally handle themselves, giving me one less thing to worry about.

Between school drop-offs, after-school activities, practices, and everything else that comes with busy weeknights, figuring out what to make for dinner is usually the last thing I want to think about. And once fall rolls around and our schedules get even busier, I find myself reaching for my slow cooker more and more.
My favorite slow cooker dinners are the ones I can throw together in the morning, turn on low, and pretty much forget about until dinnertime. There’s no standing over the stove or trying to squeeze in dinner prep between everything else going on. By the time everyone is home and hungry, dinner is already waiting for us.
That’s exactly what these recipes are. They’re hearty, family-friendly meals that can cook on low for 8 hours or more, making them perfect for busy school days, workdays, or anytime you know you’ll be out of the house. Just get everything going in the morning and come home to dinner ready to serve.
Tips for All-Day Slow Cooker Meals
If you know you’ll be gone most of the day, choose recipes with meats that do well with longer cooking times. Chuck roast, stew meat, and other tougher cuts of beef are some of my favorites because cooking them low and slow helps them become tender.
I also save ingredients like pasta, dairy, and certain cheeses for the end when the recipe calls for it. That way, everything keeps the right texture even though the main part of the meal has been cooking all day.
And of course, slow cookers can cook a little differently from one another. The first time you make a recipe, keep that in mind and adjust the cooking time if you know yours tends to run hotter or cooler.
